Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Sugar
Adds sweetness and helps balance the sharp citrus flavour.
Oranges
Provide the main flavour and juice that gives the jelly its body and taste.
Lemons
Add acidity and brightness that sharpen the orange flavour.

The step that matters

Straining the juice mixture through muslin. Straining removes pulp, pips and rind so the jelly sets clear and smooth rather than cloudy or gritty.
