What each ingredient does

Loaf sugar
Dissolves into the water and reduces to a sweet, syrupy base for the sauce.
Lemon juice
Adds sharp acidity that balances the sweetness of the syrup.
Lemon peel
Contributes aromatic oils and a bright lemon fragrance to the sauce.

The step that matters

Boil the syrup gently until reduced by half. Gentle boiling concentrates the sugar and water slowly, giving a thick, glossy syrup without caramelising. Boiling too hard risks scorching and an overly dark, bitter flavour.
