Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 300°F (150°C).

  2. Beat the butter and sugar together until creamy.

  3. Mix in the ginger and a little of the flour.

  4. Add the beaten egg, baking powder, remaining flour, salt, and milk if needed.

  5. Turn the mixture onto a floured surface and work until smooth.

  6. Roll out thinly and cut into biscuits with a cutter.

  7. Place on a greased baking sheet.

  8. Bake for about 20 minutes.
