Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Melt the butter and golden syrup together.

  2. Dissolve the bicarbonate of soda in warm water.

  3. Mix all the dry ingredients in a bowl.

  4. Add the melted butter, syrup, and dissolved soda to the dry ingredients.

  5. Work the mixture into a stiff dough and knead until smooth.

Shape and bake

  1. Divide the dough into ten pieces and roll each into a ball.

  2. Place the balls spaced apart on a greased baking tin.

  3. Top each ball with a half-blanched almond.

  4. Bake in a cool oven at 300°F (150°C) for 20 minutes.

What each ingredient does

Golden syrup
Adds sweetness and moisture, keeping the nuts soft and chewy within.
Butter
Adds fat and richness, helping the dough hold together and giving a tender texture.
Bicarbonate of soda
Reacts with the syrup and gives lift, so the nuts spread and rise slightly as they bake.
Flour
Provides the main structure that holds the stiff dough together as it bakes.
Oatmeal
Adds bulk and a slightly crumbly, hearty texture to the dough.

The step that matters

Work the dough until smooth before shaping. A properly kneaded stiff dough holds its shape on the tin, while uneven mixing can leave pockets of soda that cause patchy rising and spreading.

Swap the allspice

How well each one fits the dish's main ingredients (flour, sugar, syrup, lemon, ginger, butter, almond):
