Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓

Make the jelly
Soak the gelatine in ½ cup of cold water until soft.
Boil 1 cup of water and 1 cup of sugar for 1 minute.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the liquid into a firm, sliceable jelly once it cools.
- Sugar
- Sweetens the jelly and balances the acidity of the lemon and wine.
- Lemon juice
- Adds acidity that brightens the flavour and offsets the sweetness.
- Wine or orange juice
- Provides the main flavour and liquid base of the jelly.
- Whipped cream
- Adds soft, rich contrast to the firm, cold jelly.
The step that matters
Dissolve the gelatine fully before adding the liquids. Gelatine only sets when it is completely dissolved in hot liquid. Undissolved granules leave gritty or weak spots, so stir until no grains remain before straining and cooling.
