Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the butter and sugar.

  3. Add the egg yolks, then mix in the flour and crushed crackers alternately with the milk.

  4. Stir in the grated lemon rind and juice.

Make the meringue and bake

  1. In a separate bowl, beat the egg whites until stiff, then gradually add 3 tablespoons of sugar.

  2. Spread the meringue over the pie filling.

  3. Bake until the meringue is lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and tenderness to the filling.
Egg yolks
Thicken the filling as they set and add richness.
Egg whites
Whipped into a stiff foam that forms the light meringue topping.
Lemon juice
Provides the sharp acidity that defines the lemon flavour.
Flour
Thickens the filling so it sets and holds its shape when cut.

The step that matters

Adding the meringue sugar gradually. Sugar added slowly to whipped egg whites dissolves fully and stabilises the foam, so the meringue stays glossy and stiff rather than weeping or collapsing on the filling.
