Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash the backbone pieces well and boil them in water until cooked.

  2. Preheat the oven to 400°F (200°C).

Assemble and bake

  1. Line a baking dish with some of the pastry.

  2. Place the boiled backbone pieces in the dish with some of the cooking water.

  3. Season with salt and pepper, then add butter and a few pieces of pastry on top.

  4. Cover the dish with more pastry and bake until golden brown.

What each ingredient does

Pastry
Forms the lining and top crust that encloses the filling and browns in the oven.
Butter
Adds fat and richness, carrying flavour through the filling and aiding browning of the crust.
