Boiled Potatoes

Ingredients

Directions

  1. Wash the potatoes well and soak them in water for at least 1.5 hours to remove any brackish taste.

  2. Do not peel the potatoes before boiling.

  3. Place the potatoes in a kettle with cold water and add a little salt.

  4. Cover the kettle and boil rapidly, using just enough water to cover the potatoes.

  5. Once cooked, pour off the water and return the kettle to the stove without the lid until the steam evaporates.

  6. Serve the potatoes when they are fluffy and mealy.
