Why it works: Milk and lemon are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 19,053 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Snow Custard
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Make the custard
Preheat the oven to 350°F (175°C).
In a bowl, combine 1 quart of milk, 4 egg yolks, and 5 ounces of sugar.
Place a shallow pan of hot water in the oven and set the custard dish in it.
Bake until thick, then remove and let cool.
Make the meringue and finish
In a separate bowl, beat the reserved 4 egg whites until solid.
Gradually add ½ pound of sugar and 1 teaspoon of lemon juice while beating.
Once the custard is cold, spread the egg white mixture over the top in heaps, ensuring they do not touch.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Yolks thicken the custard as they set, while whites whip into the meringue topping.
- Milk
- Provides the liquid base that the egg yolks thicken into a custard.
- Sugar
- Sweetens the custard and stabilizes the beaten egg whites.
- Lemon juice
- Adds acidity that helps stabilize the beaten egg white foam.
The step that matters
Baking the custard in a water bath. The hot water bath moderates the oven heat so the custard sets gently and evenly. Baking it too hot can curdle the eggs and leave a grainy or cracked texture.
