Whipped Cream

Ingredients

Directions

Make the cream

  1. In a bowl, combine the sweet cream, beaten egg whites, sweet wine, powdered sugar, and lemon extract.

  2. Whip the mixture until it stands solid.

Drain and keep

  1. Remove any froth that rises with a spoon and place it on an inverted sieve over a dish to catch any draining liquid.

  2. Whip the liquid that drains through again.

  3. Keep the whipped cream on ice or in a very cool place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet cream
Provides the fat that traps air and whips into a light, stable foam.
Egg whites
Their proteins trap air and help the foam hold its shape.
Powdered sugar
Dissolves easily into the cream and adds sweetness while stabilising the foam.

The step that matters

Whipping until it stands solid. Whipping too little leaves a runny cream, while overwhipping can push the fat particles together and make it grainy or buttery. Stop when the cream holds firm peaks and keep it cold so the fat stays firm enough to hold air.

Swap the lemon

How well each one fits the dish's main ingredients (cream, egg, wine, sugar):

  1. Vanillafits better
  2. Strawberryfits about as well
  3. Raspberryfits about as well
  4. Lemonthe original

Fit is the average pairing score against cream, egg, wine, sugar. Candidates are from the same food group and used in at least 100 recipes.
