What each ingredient does

Eggs
Egg yolks and proteins thicken the cream into a rich, smooth custard as they set with heat.
Heavy cream
High fat content gives the ice cream its rich, smooth, creamy texture.
Powdered sugar
Sugar sweetens the base and lowers the freezing point, keeping the ice cream softer and scoopable.
Preserved fruits
Pieces of candied or preserved fruit add chewy texture, sweetness and bright color.

The step that matters

Cooking the custard until it just begins to boil. Stirring constantly over medium heat keeps the eggs from scrambling onto the pan bottom. Heating them gently until the mixture thickens gives a smooth custard, which makes a silkier ice cream.
