What each ingredient does

Prawns
Provide the main protein, which turns opaque and firm when cooked through.
Coconut milk
Adds richness and body to the gravy as it simmers and thickens.
Onion
Browning the onions builds sweetness and savoury depth for the gravy base.
Ghee
Fat for frying that carries the spices and browns the onions and prawns.
Lime juice
Adds acidity that brightens the finished curry.

The step that matters

Frying the prawns until nicely browned. Overcooked prawns turn rubbery, so they should be seared just until browned and opaque before the gravy is added and simmered.

Swap the onion

How well each one fits the dish's main ingredients (ghee, coconut, lime):

  1. Sweet potatofits better
  2. Capsicumfits better
  3. Arrowrootfits better
  4. Onionthe original

Fit is the average pairing score against ghee, coconut, lime. Candidates are from the same food group and used in at least 100 recipes.
