Why it works: Onion and coconut match in chemistry and in kitchens. They rank in the top 13% of all ingredient pairs, and cooks put them together in 1,831 recipes. Both carry gamma-nonanolactone, which smells coconut, sweet. The science ↓
Snake Gourd Curry with Minced Meat
Ingredients
Directions
Scrape the skins off the gourds and remove the seeds without breaking them, then cut into 3-4 inch pieces and wash.
Mince the meat and mix with half or all of the ground currystuffs and a little salt.
Stuff the gourd pieces with the meat mixture and set aside.
In a pot, heat the ghee and sauté the sliced onions until golden.
If desired, fry the minced meat in the currystuffs before stuffing the gourds.
