What each ingredient does

Ghee
Carries the spices' flavour and browns the chicken and spices for depth.
Chicken (in the method)
Provides the protein, which browns in the fat and becomes tender in the sauce.
Coconut milk
Adds creaminess and moisture, turning the spiced fat into a rich sauce.
White pumpkin or cucumbers
Softens as it simmers, adding body and mild sweetness to the sauce.
Ground onions
Cooked down in the fat, they add savory body and help thicken the sauce.

The step that matters

Frying the ground spices in ghee until browned. Toasting spices in fat releases their aromatic oils, but over-browned spices turn bitter and can scorch the pan. Watch closely and keep stirring.
