What each ingredient does

Prawns
Form the main body of the dish; their flesh firms and turns opaque as it cooks.
Red chili
Adds heat and a fresh, pungent aroma to the cooking water and prawns.

The step that matters

Cooking time. Prawn protein tightens quickly when overheated, so leaving them in the boiling water too long makes the flesh rubbery and dry. Start checking at the lower end of the time range.
