Potato Mince

Ingredients

Directions

Prepare the potato

  1. Boil and peel the potatoes, then mash them with a fork until smooth.

  2. Add a little salt and knead the potatoes until completely smooth.

Make the filling

  1. In a frying pan, heat 1 tablespoon of ghee, brown the onions, then stir in the minced meat, ground ginger, mint, and pepper or chillies.

  2. Fry the mixture until browned, then remove from heat and let it cool.

Shape and fry

  1. Form the potato paste into balls, press each into a cup shape, fill with a small amount of the fried mince, and cover with more potato paste.

  2. Shape and flatten each ball on a board, beat an egg, and smear it on each.

  3. Sprinkle with breadcrumbs and fry in the remaining ghee until light brown.

  4. Serve with boiled green peas or vegetables.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the meatball and, when mashed smooth, give a soft, cohesive coating.
Minced meat
Provides the savoury filling that sits inside the potato shell.
Ghee
Fat for browning the onions and meat and for frying the coated balls to a golden surface.
Onion
Browns in the fat to add savoury sweetness and aroma to the filling.
Egg (in the method)
Beaten and smeared on the outside, it helps the breadcrumbs stick and promotes browning.

The step that matters

Kneading the potato until completely smooth. Lumps or dry starch in the mashed potato make the paste crack and fall apart when shaped. Thorough mashing and kneading gives a smooth, cohesive dough that holds its shape and seals around the filling.

Swap the mint

How well each one fits the dish's main ingredients (potato, ghee, meat, onion, ginger, pepper):
