  4. Knead the dough well and roll it out to ¼ inch thickness.

  5. Cut the dough into circular cakes using a saucer.

Fill and fry

  1. Fill each cake with minced curry and fold them, twisting the edges to seal.

  2. Fry the filled cakes in boiling ghee until they are golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the soft, starchy base of the dough that gives the filling its body.
Wheat flour
Binds the mashed potato into a workable dough that holds its shape when rolled and sealed.
Ghee
Fries the filled cakes, conducting heat to brown the outside and adding rich flavor.

The step that matters

Sealing the filled cakes. If the edges are not pinched and twisted firmly, the filling can leak into the hot ghee and the cake may burst or fry unevenly. A tight seal keeps the filling enclosed while it cooks.

Swap the potato

How well each one fits the dish's main ingredients (wheat, flour, ghee):

  1. Potatothe original
  2. Spinachfits about as well
  3. Beetrootfits about as well
  4. Arrowrootfits about as well

Fit is the average pairing score against wheat, flour, ghee. Candidates are from the same food group and used in at least 100 recipes.
