Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the bulk and tart flavour that forms the body of the jam.
Preserving sugar
Sweetens the jam and helps it set and keep by drawing out moisture.
Lemons
Add acidity that brightens flavour and supports setting, plus aromatic oils from the rind.

The step that matters

Boiling the rhubarb. Boiling for the full 30 to 40 minutes concentrates the sugar and fruit until the jam thickens. Stopping early leaves it runny, and overcooking can make it dull and sticky.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, ginger, lemon):

  1. Cinnamonfits better
  2. Turmericfits better
  3. Corianderfits better
  4. Rhubarbthe original

Fit is the average pairing score against sugar, ginger, lemon. Candidates are from the same food group and used in at least 100 recipes.
