Why it works: Butter and parsley are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 28,563 recipes. Both carry trans-2-hexenal, which smells green, leafy. The science ↓
Poached Eggs
Ingredients
Directions
Prepare
Fill an egg poacher or spider with boiling water.
Move the poacher to one side of the stove where the water won't boil.
Poach and serve
Carefully break the eggs into the sections, cover, and let stand for three minutes or until the whites are set.
Alternatively, dip hot water over the eggs until they look pink.
Use a spatula to carefully loosen the eggs and remove them to a nicely browned and buttered piece of toast.
Season with salt and a dash of paprika, then garnish with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Coagulating proteins set the whites while the yolks stay soft and runny.
- Butter
- Fat that enriches the toast and helps it brown in the pan.
The step that matters
Keep the water below a boil while poaching. At a rolling boil the whites churn and tear apart before they can set. Holding the water just under a simmer lets the proteins firm gently and keeps the eggs intact.
Swap the parsley
How well each one fits the dish's main ingredients (egg, butter):
- Nutmegfits about as well
- Parsleythe original
- Capersfits about as well
- Tarragonfits less well
Fit is the average pairing score against egg, butter. Candidates are from the same food group and used in at least 100 recipes.
