Bread Omelet

Ingredients

Directions

  1. Prepare the pan as you would for a plain omelet.

  2. Soak the bread crumbs in just enough milk to soften them.

  3. Beat the yolks of the eggs separately.

  4. Add the seasonings and soaked bread crumbs to the yolks and mix well.

  5. Gently fold in the well-beaten egg whites and chopped pepper.

  6. Pour the mixture into the pan and leave it over the fire for a moment.

  7. Cover and set over moderate heat for ten minutes.

  8. Cut nearly through the center, fold, and turn onto a hot platter. Serve at once.
