Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Add moisture and starch that give the bread a soft, tender crumb.
Liquid yeast
Ferments the sugars so the dough rises and becomes light.
Flour
Forms gluten with the liquid, giving the dough structure and a chewy crumb.
Sugar
Feeds the yeast and adds a little sweetness and browning.

The step that matters

Knead the dough on a greased surface without adding flour.. Extra flour dried into a stiff dough makes the loaves tough and dry. Kneading on a greased surface develops gluten while keeping the dough soft enough to shape.

Swap the potato

How well each one fits the dish's main ingredients (sugar, flour):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
