Boiled Potatoes

Ingredients

Directions

  1. Wash the potatoes without cutting them.

  2. Place them in boiling water, just enough to cover them.

  3. Boil moderately until a fork easily penetrates them, about 25 minutes for young potatoes and 50 minutes for old potatoes.

  4. Pour off the water and let them stand until dry.

  5. Do not leave them in the water after they are done.

What each ingredient does

Potatoes
Form the dish itself; their starch softens and becomes fluffy as they cook through.

The step that matters

Pour off the water promptly once the potatoes are done. Potatoes left in hot water keep absorbing moisture and continue cooking, so they turn waterlogged, soft and mushy. Draining and letting them dry lets surface moisture evaporate.
