What each ingredient does

Quaker oats
Provide the starch and fibre that thicken the water into a creamy porridge as they cook.
Salted water
Hydrates the oats and carries the salt that seasons the porridge as it absorbs.

The step that matters

Stirring the oats into boiling water. Adding oats slowly to boiling water and stirring keeps the grains separated, so they hydrate evenly instead of clumping into lumps. Constant stirring during the rapid boil also prevents the starch from settling and scorching on the base of the pan.
