Why it works: Butter and egg are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 118,967 recipes. Both carry decanal, which smells soap, orange peel. The science ↓
Poached Eggs
Ingredients
Directions
Prepare the water
Fill an omelet pan two-thirds full with boiling salted water or well-seasoned white stock.
Add 1 1/2 teaspoons of coarse sea salt for every quart of water.
Butter muffin rings and place them in the water.
Ensure the water covers the eggs.
Poach and serve
Break the desired number of eggs into a cup and slip them carefully into the muffin rings.
When the whites are solid and a film covers the yolk, remove the eggs carefully with a buttered skimmer.
Place the eggs on circular pieces of buttered toast.
Add a dot of butter on each egg, sprinkle lightly with salt and pepper, and serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Coagulating proteins in the whites set into a tender shape while the yolk stays soft.
- Butter
- Adds richness and a silky mouthfeel to the finished eggs and toast.
- Coarse sea salt
- Seasons the poaching water so the eggs take on a light flavour.
The step that matters
Keep the eggs in the water until the whites are solid. Egg white proteins set gradually as they heat. Removing the eggs too early leaves runny whites, while leaving them too long firms the yolk and toughens the texture.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
