Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten whites add air and a light, smooth texture to the frozen sorbet.
Sugar
Dissolved in boiling water to form a syrup that sweetens and softens the ice texture.
Pineapple
Provides the main fruit flavour and aroma, along with natural acidity.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.

The step that matters

Fold in the beaten egg whites. Whites must be beaten to soft peaks and folded gently so the air they hold is not lost. Keeping the mixture cold while folding helps it stay light and set firm when frozen.
