Ingredients

Directions

Prepare the sandwich

  1. Drain the preserved salmon on a cloth to remove excess oil.

  2. Butter the slices of bread lightly.

  3. Cover one slice of bread with the drained salmon and place the other slice on top, pressing lightly.

Add the egg yolk topping

  1. Mix the egg yolks with fresh butter, mustard, pepper, and salt, then spread the egg yolk mixture on top of the sandwich.

Shape and garnish

  1. Use a sharp cutter to stamp out crescent or oval shapes from the sandwich.

  2. If desired, mix remaining egg yolk butter with lobster coral, place in a piping bag, and pipe a roll shape in the center of each sandwich.

  3. Garnish with small sprigs of parsley before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Preserved salmon
Provides the main savoury, salty flavour and the filling of the sandwich.
Hard-boiled egg yolks
Their rich, crumbly texture forms the creamy topping and adds savoury richness.
Fresh butter
Adds fat and smoothness, binding the egg yolks into a spreadable mixture.
Sandwich bread
Provides the structure that holds the salmon and topping together.
Mustard
Adds sharp acidity and pungency that cut through the richness of the fat and yolk.

The step that matters

Draining the preserved salmon. Excess oil left on the fish can soak into the bread and make the sandwich soggy, so draining on a cloth keeps the bread firm and the flavours clean.
