Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich puff pastry
Bakes into flaky, crisp layers that hold the filling.
Large fresh oysters
Provide the main filling, becoming tender when gently stewed.
Butter
Adds richness and a smooth, silky mouthfeel to the filling.
Hard-boiled egg
Grated into the filling to add body and a soft, rich texture.
Oyster liquor
Adds savory sea flavor and moisture to the stewed filling.

The step that matters

Stewing the oysters briefly. Oysters toughen and shrink when overcooked, so they should be stewed only until their edges just curl. Cooling them fully afterwards keeps the filling from making the pastry soggy.

Swap the mace

How well each one fits the dish's main ingredients (oyster, clove, nutmeg, egg, butter):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against oyster, clove, nutmeg, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
