What each ingredient does

Cucumbers
Provide the main crisp, pickled body of the mix.
Cauliflower
Adds firm texture that holds up through soaking and pickling.
White cabbage
Adds crunch and bulk to the mixed pickle.
Onions
Contribute savory flavour and sweetness that mellows during pickling.
Black mustard seed
Adds sharp, pungent flavour that deepens in the vinegar.
Ground mustard
Adds pungency and flavour to the vinegar covering.

The step that matters

Draining after the brine soak. The vegetables must be drained well before the mustard seeds and pepper are added, so excess brine does not dilute the vinegar or make the mix too salty.
