Why it works: Cinnamon and nutmeg match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 11,917 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Mince Pie
Ingredients
Directions
Boil and chop the beef.
Chop the suet, raisins, currants, and citron.
In a large bowl, combine the beef, suet, raisins, currants, citron, sugar, lemon rind and juice, orange rind and juice, cinnamon, nutmeg, cloves, mace, brandy, wine, and salt.
Pack the mixture tightly in a jar and stir well before using.
To make the pie, use nearly 2/3 apples and more than 1/3 meat.
Add enough cider to make it juicy and enough sugar to make it sweet.
