Geape Jam

Ingredients

Directions

Prepare the fruit

  1. Separate the skin from the pulp of the grapes, keeping them in separate dishes.

  2. Place the pulp in a preserving kettle with 1 teacup of water.

  3. Heat the pulp thoroughly, then run it through a colander to separate the seeds.

  4. Combine the skins with the pulp and weigh the mixture.

Cook the jam

  1. For each pound of fruit, add ¾ pound of sugar and just enough water to prevent burning.

  2. Cook slowly for 45 minutes.

What each ingredient does

Grapes
Provide the fruit pulp and skins that set the jam and give its flavor.
Sugar
Sweetens the jam and helps it thicken as it cooks down.

The step that matters

Cook slowly for 45 minutes. Slow cooking lets the pectin and sugar concentrate gradually, so the jam thickens without scorching on the bottom of the kettle.
