Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Dissolve the baking soda in the milk.

  3. Flour the chopped raisins to prevent them from sinking.

Make the batter

  1. In a bowl, mix the butter and sugar into the light dough using your hands.

  2. Add the egg, grated nutmeg, cinnamon, and dissolved baking soda mixture to the dough.

  3. If using, add the wine or brandy and mix thoroughly.

  4. If the batter seems too thin, add a little flour.

  5. Stir until well combined and let it rise for about an hour or until it looks light.

Bake

  1. Pour the batter into a greased loaf pan and bake for about 45 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Binds the batter and adds structure as it sets in the oven.
Butter
Adds richness and tenderness through fat in the batter.
Baking soda
Reacts with the batter to help it rise and encourages browning.
Sugar
Sweetens the batter and helps the crust turn golden brown.
Chopped raisins
Add chewy pockets of sweetness throughout the loaf.

The step that matters

Flouring the chopped raisins. Dusting the raisins with flour helps them stay suspended in the batter instead of sinking to the bottom of the loaf during baking.

Swap the raisin

How well each one fits the dish's main ingredients (sugar, butter, egg, nutmeg, cinnamon, wine, milk):
