Ingredients

Directions

Line the mould

  1. Butter a mould and line the inside with Savoy biscuits, moistening the edges with beaten egg white to hold them together.

  2. Arrange the biscuits upright around the sides, overlapping slightly to prevent cream from escaping.

  3. Arrange biscuits in a star or rosette pattern at the bottom, ensuring it is well covered.

  4. Dry the biscuit base in the oven.

Make and fill

  1. Whisk the cream with Vanderhum, dissolved isinglass, and loaf sugar to taste until firm.

  2. Fill the inside of the Charlotte Russe with the cream mixture.

  3. Place a slice of sponge cake on top.

  4. Set in a cool place or ice until cold.

Finish and decorate

  1. Cover with cream and decorate with chocolates, sprinkles, or crystallized cherries.

What each ingredient does

Savoy biscuits
Form the crisp outer wall that holds the set cream in shape.
Cream
Provides richness and the body that whisks and sets into the filling.
Isinglass
Gelatine-like setting agent that firms the cream so it holds its shape when cold.
Loaf sugar
Adds sweetness to the cream filling.
Vanderhum
Adds liqueur flavour to the cream filling.
Sponge cake
Forms a soft layer that sits on top of the cream filling.

The step that matters

Whisking the cream until firm. Cream must be whipped to the right stiffness before the dissolved isinglass sets it. If it is under-whipped it will stay loose, and if over-whipped it can turn grainy and separate, so the filling may not hold its shape when chilled.
