Lemon Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the yolks of the eggs and the grated rind of the lemons, mixing well.

  4. Pour this mixture into a rich pastry crust and partially bake it.

Make the meringue and finish

  1. Beat the egg whites until stiff, adding 1 tablespoon of sugar for each egg.

  2. Fold in the juice of the lemons into the meringue.

  3. Spread the meringue over the pudding and brown it quickly in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to create a light, fine-textured base for the filling.
Eggs
Yolks thicken the filling, while whites whip into a stiff meringue that gives lift and structure.
Sugar
Sweetens the filling and helps stabilise the beaten egg whites in the meringue.
Lemon juice
Adds acidity and bright lemon flavour that balances the sweetness.

The step that matters

Beating the egg whites until stiff. Egg whites must be fully whipped with sugar to form a stable foam. Underbeaten whites collapse, and the meringue then weeps or browns unevenly.
