Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. In a saucepan, combine the loaf sugar and enough water to dissolve it.

  2. In a large bowl, mix the flour, pounded almonds, grated nutmeg, chopped lemon rind, and ground ginger.

  3. Pour the hot syrup into the dry mixture and stir to form a stiff paste.

  4. Roll the paste into a long, thick piece.

Bake and dry

  1. Bake in a preheated oven at 400°F (200°C) for about 1 hour.

  2. Once baked, cut into pieces and place them before the fire to dry.

What each ingredient does

Loaf sugar
Dissolved into a hot syrup that binds the dry ingredients into a paste and adds sweetness.
All-purpose flour
Provides the structure that holds the stiff paste together as it bakes.
Blanched almonds
Add body, nutty flavour and richness to the dough, pounded fine so they blend in.

The step that matters

Stirring the hot syrup into the dry mixture. The syrup must be hot and mixed in fully so the flour and almonds hydrate evenly and form a stiff, uniform paste. Lumps or uneven moisture can make the biscuits crumble or bake unevenly.
