Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Butter a pie dish and line it with slices of sponge cake.

  2. Add a layer of sliced bananas on top.

  3. Spread some apricot jam over the bananas.

  4. Squeeze a little lemon juice over the jam.

  5. Add another layer of sponge cake on top.

  6. Dot with pieces of butter.

  7. Bake in a moderate oven at 350°F (175°C) for half an hour.

  8. When cold, serve with whipped cream.
