What each ingredient does

Eggs
Set the custard and bind the pudding into a firm, sliceable body.
Bread
Soaks up the custard and brandy to form the pudding's soft, absorbent body.
Milk
Forms the liquid base of the custard, providing moisture and softness.
Loaf sugar
Sweetens the custard and dissolves into the milk before it cools.
Brandy
Adds aroma and flavour while soaking into the bread.

The step that matters

Chilling the custard before assembly. Eggs must be fully cooled before mixing so they do not scramble in the hot milk. Chilling until cold also keeps the custard thick enough to soak evenly into the bread before steaming.

Swap the orange

How well each one fits the dish's main ingredients (sugar, milk, egg, bread, brandy, raisin, butter):

  1. Vanillafits better
  2. Figfits better
  3. Applefits better
  4. Orangethe original

Fit is the average pairing score against sugar, milk, egg, bread, brandy, raisin, butter. Candidates are from the same food group and used in at least 100 recipes.
