Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Calf's Head Brawn

Ingredients

Directions

Prepare the pickle

  1. Wash the calf's head well, remove the brains and soft bone.

  2. Prepare a pickle with 1 pound of coarse sea salt, ¼ pound of coarse sea salt, ½ pound of moist sugar, and 1 ounce of saltpetre boiled in 3 quarts of water for 20 minutes. Skim and cool.

  3. Soak the head in the pickle for 8 days, turning it daily.

Cook and set

  1. Remove the head, wash it well, and boil gently until tender.

  2. Remove the bones and place the hot meat into a brawn tin, seasoning with salt, pepper, pounded mace, and a little cayenne.

  3. Place a heavy weight on top and let it stand until firm.

  4. Turn it out and garnish with parsley.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's head
Forms the meat and gelatinous body of the brawn once cooked and set.
Coarse sea salt
Draws out moisture and seasons the meat during the long pickling soak.
Saltpetre
Preserves the meat and helps give it a pink, cured colour.
Moist sugar
Balances the saltiness of the pickle and softens the flavour of the meat.

The step that matters

Soaking the head in the pickle. The head must stay fully submerged and be turned daily so the cure penetrates evenly. Uneven curing lets parts spoil or cure unevenly, and the long soak is what preserves the meat.

Swap the mace

How well each one fits the dish's main ingredients (sugar, pepper, parsley):

  1. Marjoramfits better
  2. Thymefits better
  3. Dillfits better
  4. Macethe original

Fit is the average pairing score against sugar, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes.
