Ingredients

Directions

Prepare the cauliflower

  1. Cut the stalk of the cauliflower close to the bottom and trim the leaves, leaving a circle of leaf-stalks.

  2. Soak the cauliflower head in vinegar and water for 15 minutes to remove insects.

Boil and make the sauce

  1. Boil water with salt, then add the cauliflower head, cooking until tender, about 15-25 minutes.

  2. Remove the cauliflower and drain it.

  3. In a saucepan, melt the butter and mix in the flour until smooth.

  4. Add salt to taste and ½ pint of water, stirring until it boils.

Serve

  1. Strain the sauce over the cauliflower and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the main body of the dish, cooked until tender throughout.
Butter
Enriches the sauce and carries flavour, giving it a smooth, rich mouthfeel.
Flour
Thickens the melted butter and water into a smooth sauce.

The step that matters

Mixing the flour into the butter. Stirring the flour into the melted butter before adding liquid cooks out raw starch taste and keeps the sauce smooth; adding liquid too early can leave lumps.

Swap the cauliflower

How well each one fits the dish's main ingredients (vinegar, egg, butter, flour):
