What each ingredient does

Cauliflower
Forms the crisp, pickled body of the dish once blanched and soaked in vinegar.
Vinegar
Provides the acidity that preserves and sharpens the pickle.
Peppercorns
Add pungent, warm spice flavour to the spiced vinegar.
Ginger
Adds aromatic warmth that infuses into the vinegar.
Mace
Contributes a delicate, aromatic spice flavour to the pickling liquid.

The step that matters

Blanch the florets without boiling over. Brief blanching softens the cauliflower just enough to take up brine while keeping it crisp. Over-boiling makes the florets soft and mushy, which weakens the final texture.

Swap the mace

How well each one fits the dish's main ingredients (cauliflower, vinegar, pepper, ginger):

  1. Turmericfits better
  2. Allspicefits better
  3. Clovefits better
  4. Macethe original

Fit is the average pairing score against cauliflower, vinegar, pepper, ginger. Candidates are from the same food group and used in at least 100 recipes.
