Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Whisk the egg yolks and mix with sugar, almonds, lemon rind and juice, and butter.

  2. Stir the mixture over medium heat for a few minutes.

Bake and finish

  1. Pour the mixture into a small buttered pie dish lined with puff pastry.

  2. Bake in a 350°F (175°C) oven for 20 minutes.

  3. Whisk the egg whites to a firm froth while the pudding bakes.

  4. Cover the pudding with the froth, sift sugar over it, and bake for an additional 5 minutes.

What each ingredient does

Egg yolks
Thicken the filling as they cook, giving it a rich, custard-like body.
Egg whites
Whipped to a firm froth, they form a light topping that puffs and sets as it bakes.
Almonds
Add nutty flavour and body to the filling as they are pounded into it.
Butter
Adds richness and fat, giving the filling a smooth, tender texture.
Sugar
Sweetens the filling and helps the sifted topping brown lightly in the oven.
Puff pastry
Forms the flaky crust that holds the filling in the pie dish.

The step that matters

Whipping the egg whites to a firm froth. Egg whites hold air only when whipped to stiff peaks without deflating. A loose froth will sink into the filling and produce a flat, dense topping instead of a light, set layer.
