What each ingredient does

Loin chops
Provide the main protein, which is browned under the broiler before stewing.
Spanish onions
Break down into a soft pulp that forms the body of the sauce around the chops.
Butter
Adds richness and fat, helping the onions soften gently and carry flavor.
Chili vinegar
Adds acidity and sharp heat that cut through the rich butter and onion.

The step that matters

Stewing gently until the onions reach a pulp. Low, gentle heat with a covered pan lets the onions soften and release their moisture slowly. Rushing with high heat can scorch the butter and onions before they break down, leaving a dry, uneven base.

Swap the onion
