Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cod
Forms the flaky main body of the dish, cooked gently in the sauce.
Butter
Adds richness and carries flavour, and flour mixed in thickens the sauce.
Flour
Thickens the stock-based sauce so it coats the fish.
Oysters
Contribute a briny, savoury flavour to the sauce.
Sherry
Adds acidity and aromatic depth to the sauce.
Stock
Forms the liquid base of the sauce that the fish simmers in.

The step that matters

Frying the cod until golden. Browning the surface through the Maillard reaction builds flavour before the fish is stewed. Frying too gently leaves it pale and bland, while fish left too long can break apart once simmered in the sauce.

Swap the mace

How well each one fits the dish's main ingredients (butter, pepper, flour, anchovy, sherry, lemon, oyster):

  1. Parsleyfits better
  2. Thymefits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against butter, pepper, flour, anchovy, sherry, lemon, oyster. Candidates are from the same food group and used in at least 100 recipes.
