What each ingredient does

Cucumbers
Provide the main vegetable, which softens during gentle stewing into tender pieces.
Flour
Coats the cucumber pieces so they brown in the hot butter and help thicken the gravy.
Butter
Fries the cucumber surfaces, adding browning and rich flavour.
Brown gravy
Supplies the liquid and savoury body in which the cucumbers stew.
Chili vinegar
Adds sharp acidity and heat that brighten the rich gravy.
Sugar
Adds a small amount of sweetness to balance the vinegar's acidity.

The step that matters

Frying until lightly browned. Browning the floured cucumber surfaces in hot butter builds flavour through the Maillard reaction. Frying too long or too hot can scorch the flour and make the pieces bitter before stewing.
