Ingredients

Directions

Prepare

  1. Clean and skin the eels, then cut them into small pieces.

Make the broth

  1. In a stewpan, combine the eels, sweet herbs, parsley, onion, peppercorns, cloves, salt, pepper, and water.

  2. Simmer until the liquid is reduced by half, skimming off any scum that rises.

  3. Strain the broth through a sieve.

Finish and serve

  1. Once cooled, remove the fat and warm only the amount needed for serving.

  2. Serve with toasted bread slices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eels
Provide the main flavour and body of the broth as they simmer.
Onion
Adds aromatic sweetness and depth to the broth as it cooks.

The step that matters

Skimming off the scum while simmering. Scum is coagulated protein and impurities that rise to the surface; removing it keeps the broth clear and free of off flavours. Skimming during the simmer gives a cleaner, clearer result.

Swap the onion

How well each one fits the dish's main ingredients (parsley, clove, pepper):

  1. Carrotfits better
  2. Shallotfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against parsley, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
