What each ingredient does

Eggs
Set when heated gently, thickening the mixture into a spreadable, creamy texture.
Butter
Adds richness and fat, giving the eggs a smooth, silky texture and flavor.

The step that matters

Stir over gentle heat without boiling. Egg proteins set and curdle when overheated. Stirring constantly over gentle heat, and never letting the mixture boil, keeps it smooth and thick rather than grainy or scrambled.
