Fruit, Vol-au-vent of

Oven, in the book's wordsA good brisk oven

Ingredients

Directions

The book says “a good brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Brush the puff paste with lemon juice before folding it for the last time.

  2. Roll out the paste to the desired thickness and place it on a baking sheet.

  3. Cut into shape with a tin cutter or plate, and brush the center with egg white, leaving a margin unmoistened.

  4. Make a deep incision, an inch from the edge, in a circular form, separating the edges without cutting through.

  5. Put the paste to rise in a 400°F (200°C) oven.

  6. Once risen, lift off the marked middle portion and scoop out the dough without cutting through the edge.

  7. Fill the hollow with bread and return the vol-au-vent to the oven.

  8. Brush with egg and cover with sifted sugar.

  9. When done, remove the bread and fill the inside with strawberries or raspberries mixed with pounded sugar.

  10. Serve with whipped cream over the top.
