Goose Stuffing, Potato

Ingredients

Directions

Prepare the stuffing

  1. Peel, wash, and cut the potatoes into small pieces.

  2. In a stewpan, combine the potatoes and minced onion with the butter. Cover the pan and shake it to prevent sticking; cook until the potatoes are partly cooked but not tender.

  3. Mix in the chopped liver, sage, salt, and pepper.

Stuff and roast

  1. Stuff the mixture inside the goose and tie the openings securely.

  2. Roast the goose as desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the stuffing and soak up the rendered goose fat and juices.
Goose liver
Adds richness and a deep, savory flavor to the stuffing.
Butter
Adds fat and richness and helps the potatoes and onion soften without sticking.

The step that matters

Cook the potatoes only partly. Potatoes that are fully cooked before stuffing turn mushy inside the bird, while partly cooked pieces finish tender as the goose roasts and absorb its juices.

Swap the walnut

How well each one fits the dish's main ingredients (potato, onion, butter, sage, pepper, liver):

  1. Beansfits better
  2. Chestnutfits about as well
  3. Walnutthe original
  4. Lentilsfits less well

Fit is the average pairing score against potato, onion, butter, sage, pepper, liver. Candidates are from the same food group and used in at least 100 recipes.
