Ingredients

Directions

Make the base

  1. Beat the egg yolks with flour and a small piece of butter.

  2. Add pepper, salt, mace, vinegar, and water.

  3. Heat the mixture in a saucepan, stirring until it just begins to boil.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Emulsify the butter and thicken the sauce as they set gently with heat.
Butter
Adds richness and fat that, emulsified with the yolks, gives the sauce its smooth body.
Flour
Helps stabilise the yolk mixture so it is less likely to scramble under heat.
Vinegar
Adds acidity that brightens the flavour and balances the richness of the butter.

The step that matters

Stir continuously over gentle heat, then keep the sauce off the heat. Egg yolks scramble if they get too hot, and butter added to a sauce that is still too hot can break it. Constant stirring spreads heat evenly and helps the butter emulsify into a smooth sauce.

Swap the mace

How well each one fits the dish's main ingredients (egg, flour, butter, hazelnut, pepper, vinegar):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against egg, flour, butter, hazelnut, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
