Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clear wine jelly
Forms the firm, sliceable base that holds the molded shape.
Heavy cream
Whipped into a light, airy topping that adds richness and soft texture.
Glace fruits
Add sweetness and chewy texture to the whipped cream filling.
Brandy
Adds aroma and a warm flavor note to the fruit and cream filling.

The step that matters

Whip the cream to soft peaks only. Cream over-whipped past soft peaks turns grainy and can separate into butter, so it will not hold a clean shape or blend smoothly with the fruit.
