Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb cutlets
Provide the main meat, whose fat renders and browns on the hot grill.
Mutton or lamb fat
Greases the gridiron so the cutlets do not stick and gain a little flavour.
Mashed potatoes
Form a soft base that supports the cutlets and adds a mild, creamy contrast.
Hot gravy
Adds moisture and savoury flavour to the plate.

The step that matters

Turning the cutlets every minute over the fire. Frequent turning cooks the cutlets evenly and helps prevent the outside from scorching before the centre is cooked through. Sear quickly over a clear, hot fire so the surface browns and the juices stay inside.

Swap the peas

How well each one fits the dish's main ingredients (lamb, mutton, pepper, potato):

  1. Beansfits better
  2. Peasthe original
  3. Chickpeafits about as well
  4. Lentilsfits less well

Fit is the average pairing score against lamb, mutton, pepper, potato. Candidates are from the same food group and used in at least 100 recipes.
